Formerly at the top of my ever-growing Bucket List of travel destinations was the beautiful country of Iceland. I had the opportunity to visit back in 2017 with my boyfriend-turned-husband, Josh. We enjoyed an action-packed trip of traveling around the country in a camper van. We got engaged in the Westfjords (!!!), went on hikes, saw hundreds of waterfalls, glaciers, the Aurora Borealis, and subsisted on a stash of ramen noodles, canned soup, peanut butter and jelly sandwiches, beef jerky, trail mix which we smuggled in a checked duffel bag.
After eight days of duffel bag food and the occasional gas station hot dog, we returned to the city of Reykjavik to enjoy a proper dinner to wrap up our trip (and celebrate our engagement) at Saeta Svinid Gastropub. The Sæta Svínið Burger, made with rump steak and short ribs, a beer brioche bun, red onion jam, Icelandic cheese, truffle mayo and a side of waffle fries, was one of the best burgers I've eaten. We also sampled a shot of Iceland's local liquor, Brennevin, small plates of smoked puffin and smoked whale, and a few pints off of their great beer menu.
