The philosophy at De Kas is "from plant to plate as quickly as possible," which is an ambitious and deeply admirable mission statement. Seasonal produce is the star of the menu, and every dish served is as fresh and bright as this sentiment suggests.
There are over 300 varieties of produce grown onsite in their greenhouse and surrounding gardens, as well as at a satellite farm just outside of Amsterdam, all of which inform De Kas' incredible plant-forward lunch and dinner set menus.
Situated in Frankendael Park in the heart of Amsterdam, the space which De Kas occupies was built in 1927 as a working greenhouse formerly used to supply local parks with trees, grasses, and plants. It was converted into a restaurant in 2000 where diners now enjoy beautifully prepared dishes from one of the world's first farm-to-table restaurants.
Bursting with fresh flavor and a rainbow of colors, the vegetables on the plates at DeKas are as full of life as the moment they were picked.
